Woo! Life has been busy! I’ve been adding in a lot of fun activities since getting home from PAX. [PS PAX was totally amazing!] I start school in a week and I have a job interview tomorrow morning [fingers crossed!] so I’ll need a solid menu plan. Plus my allergies are in overdrive so I’m trying to get them under control too.

As you can see I make a big batch of stuff and eat it throughout the week. It doesn’t bother me at all. If I get tired of the egg salad or the chili I have homemade burritos^* in the freezer or empanadas^*! Plus that hummus^* freezes beautifully!

This week is going to suck for me healthwise. I overindulged on the weekend [like usual hence why I don’t meal plan for the weekend plus the boy [who is vegan] is usually over and we just kind of meal plan on the fly]. I woke up this morning and remembered all the junk I ate on the weekend.
Oh the delicious junk. I made a very small batch of vegan snickerdoodles [like 7 tiny cookies], then I made sloppy lentils, I baked bread, and made the best vegan brownies in the land. I still have a ton of them as well. Girl time started they won’t last the week.
This week is also going to be hard healthwise because I’m going to a videogame convention on Thursday and I’m dead broke. I’m bringing my food with me. I’m taking homemade bread, homemade granola bars, easy bean salad, cottage cheese, peanut butter, carrot/celery sticks, cheddar bunnies, and apples. I’d LOVE to pick up some wine, but I don’t think I’ll have the money. It should be fun, but I’ll be eating about 10,000 carbs a day. I know that the boy is planning on taking me to Cyber Dogs [a vegan hot dog place that is AMAZING in Seattle] for like every dinner/drunk snack since he’s in love with it. I’m hoping to make some veggie conscious choices there.
Oh and about those weight fluctuations. I went from 124 to 132 over the course of the weekend - REALLY. Thanks body! So terrible. So chubby now.

Easy Sardine Salad adapted from Bread & Honey.
Chop up all the veggies all about the same size. Mix up the Olive oil, rice wine vinegar, salt/pepper, and mustard [I put it all in an old jam jar and mixed it up]. Combine the veggies and the pasta. NOW this salad makes 2 [GIANT] servings so divide in half. So if you want to store it [like I did] put half the tin of sardines on the salad, and put the rest in a bag and put it in the fridge. Dress the salad. Add the basil to the top. Store the rest of the salad in the fridge for the next day. To assemble the following day dump the dressing and the sardines on the salad. Chop up some more basil and toss everything up!
This salad is super delicious and very cheap to make.

This was the basic recipe that I used and adapted for my lunch today. I found that it serves 2 so I will have to make more again soon. It was delicious! I’ll post my version of it tomorrow along with my thoughts on sardines.
So I worked out today. I kind of stopped working out on Friday. I am going to hurt tomorrow! No more abs! I’m about to go make up a sardine salad. I need to eat lunch early so I can work on a project for school that is due tonight! I’m also a procrasterterian.
